Alicia’s Homemade Recipes

Garlic Shrimp Skewers

Ingredients:

  • 2 lbs. shrimp (preferably ‘Extra Large’ or larger)

  • 2/3 cup extra virgin olive oil (EVOO)

  • 2 Tbs. Worcestershire sauce

  • 2/3 cup lime juice

  • ¼ cup finely chopped cilantro

  • 2 medium red cherry peppers finely chopped

  • 1 packet Alicia’s Homemade® Garlic Garlic

  • 3 Tbs. water

Directions:

Combine in bowl EVOO, lime juice, Worcestershire sauce, cilantro, red cherry peppers, Alicia’s Homemade® Garlic Garlic, and water. Mix well and let sit for 15 minutes.

Devein the shrimp (if not already). In ziplock bag, combine shrimp and garlic mix. Place in fridge for two (2) hours.

Pre-heat grill, then skewer shrimp and place on grill. Cook both sides until pink and firm to the touch.

Southwest Baked Potatoes & Onions

Ingredients

  • 2 lbs - fingerling potatoes

  • 1 medium onion

  • 2 tbsp - Alicia’s Homemade® Southwestern Dip and Seasoning Blend

  • 2 tbsp - extra virgin olive oil EVOO

  • 2 tbsp - water

Instructions

Preheat oven to 350*F.

Wash and rough chop the fingerling potatoes.

Cut onion into medium sized slices.

Combine Alicia's Homemade® Southwestern Dip and Seasoning Blend, EVOO, and water in a medium bowl, whisk.

Add cut fingerling potatoes and onions to bowl and coat with seasoning mixture.

Place potatoes and onion mixture into 9"x13" baking dish.

Bake for approximately 40 minutes or until crispy (but not burnt).

Enjoy.

Creole Cauliflower Flats

Ingredients:

  • 1 head of cauliflower

  • Alicia’s Homemade® Creole Dip and Seasoning Blend

  • Extra virgin olive oil (EVOO) cooking spray

Directions:

Preheat oven to 350 degrees.

Cut cauliflower florets off of the head of cauliflower, then slice florets into approximately ½” slices so that they can be laid flat.

Spray cookie sheet(s) with EVOO cooking spray.

Lay sliced cauliflower flat on cookie sheet.

Sprinkle Alicia’s Homemade® Creole Dip and Seasoning Blend on cauliflower (to taste).

Flip cauliflower and repeat Step #5.

Cook at 350 degrees for approximately 30-35 minutes or desired firmness, flipping once after about 20 minutes. Serve and enjoy.

Greek Tzatziki Sauce

Ingredients:

  • 1-1/2 Cups – Low fat Greek Yogurt

  • 2-1/2 TBS - Alicia’s Homemade® Greek Herb Dip and Seasoning Blend

  • ½ Cup – Cucumber (finely minced)

  • 1/2 - Lemon (medium size)

Directions:

Mix Alicia’s Homemade® Greek Herb Dip and Seasoning Blend, Greek Yogurt, and cucumber in a medium sized bowl, let rest in refrigerator for 1-2 hours.

Remove the Greek Herb and yogurt mix, and add the juice of approximately half a lemon, to taste.

Use the Tzatziki sauce on your favorite kebobs, gyros, sandwiches, or as a fresh vegetable dip.
